Perfect for Fall and Winter, this delicious soup is easy to make and if you have any leftovers, they will taste just as good, if not better than the first time you eat it!
White Bean Garlic Shrimp Soup
Ingredients
1 Bulb Garlic, diced
1 Large Onion, diced
8+ Strips Bacon, chopped
3 19oz (540 mL) Cannellini Beans
2 340g Raw Shrimp (Marina Del Rey Wild Caught Argentinian Shrimp- 20/40 per lb)
900 mL Low Sodium Chicken Broth
900 mL Vegetable Broth
1/2 Tbsp Red Chili Flakes
1 Tbsp Dried Rosemary
2 Tbsp Dried Thyme
142g (5oz) Baby Spinach
1 Cup Parmesan Cheese, grated
400 mL Coconut Milk
Salt and Pepper to taste
Directions
- Over medium heat, brown the bacon. Remove from pot and leave to the side but leave the bacon grease in pot.
- Add the butter, allow it to melt, then add the shrimp and red chili flakes. Cook until pink, 2-3 minutes per side. Remove and leave to the side with the bacon.
- Add onions and cook until translucent. Add garlic, cook until fragrant.
- Add the beans, spices, broth, parmesan and very slowly add the coconut milk, stirring constantly, while scraping the brown bits at the bottom of the pot.
- Cover, and allow it to come to a boil, continuing to stir. Lower the heat to medium-low.
- At this point, you can do one of two things. You can either add the spinach and then use an immersion blender, OR, you can use the immersion blender first and then add the spinach. It all depends on whether you want the spinach incorporated (kids won’t even taste it), or if you like the texture of full spinach leaves in the soup.
- Allow it to simmer on medium-low. Add the shrimp, and garnish with the bacon bits right before serving, season with salt and pepper to taste.
If you have leftovers, they will just absorb more of the bacon taste so it will be absolutely delicious, but be sure to eat them within a few days.
*The next time I make this, I may leave one or two cans of beans unblended to add some texture. Notes to come.
