Inspired by Homemade Mastery, this recipe of Vegetables with Ground Beef is a great way to mix healthy vegetables with comforting protein. You have the freedom to use the vegetables that you wish and you can pair them with the grain of your choosing. (I’ll forever be a fan of Uncle Ben’s Ready to Heat packets of rice. Pop them in the microwave for 90 seconds and voila!) Ground pork is another option if you want to omit beef, and thankfully, it’s usually the less expensive option too.
Vegetables with Ground Beef
Ingredients
- 10oz/ 300g Ground Beef or Pork
- 1 Tbsp each, Black Pepper, Dried Oregano, Cumin
- 1 Tbsp Chili Flakes
- 3 Garlic Cloves, minced
- Juice of 1/2 Lemon
- 1 Scallion, thinly chopped
- 1 cup Bell Pepper, chopped
- 2 Medium Carrots or 1 Large Carrot, chopped
- 1 Zucchini, cubed
- 1 cup Cauliflower Florets, thinly chopped
- Salt and Pepper, to taste
- 1 Tbsp Tomato Paste, optional
- 1 Tbsp Olive Oil
Instructions
Cook the ground beef at medium-high heat with olive oil, some salt, cumin, oregano, black pepper, and chili flakes. Break the meat into pieces with a spatula and stir for 3-4 minutes.
Add in the peppers, zucchini, scallions, carrot, cauliflower and garlic. Cover with a lid, reduce temp a bit, and cook for 3 minutes.
Stir in the tomato paste if using. Add salt and pepper to taste along with a squeeze of lemon or lemon juice. Stir for another 2 minutes.
Serve with some avocado and greens for a lower-carb option or over rice for a more nutritionally balanced meal.
