I don’t know about you, but I love sweet potatoes. Sweet potato fries, sweet potato chili, mashed sweet potatoes- you name it! I recently had another massive craving for sweet potatoes, so it was time to try something new.
With the cold and wet “Spring” weather Montreal’s been experiencing, this Ground Turkey Sweet Potato Skillet recipe from Life, Love, Liz was the perfect recipe to try!
Sweet Potato and Ground Turkey Skillet Recipe
Ingredients
2 large sweet potatoes, peeled and diced
1 pound ground turkey
1-3 bell peppers (it doesn’t really matter which color, but I’d recommend anything but green)
Approx. 1 cup onion, diced
½ cup shredded mozzarella
½ cup water
¼ cup cilantro, chopped
2 Tbsp olive oil
1-2 Tbsp ground cumin
1 Tbsp garlic, minced
1 tsp chili powder
½ tsp salt, pepper
Instructions
In a large skillet, heat olive oil over medium-high heat. Add garlic, and heat for about a minute. Add ground turkey. Break up the meat and continue cooking until browned.
Add cumin, chili powder, salt, and pepper. Stir well.
Add onion and bell pepper, and cook for 3-4 minutes.
Add diced sweet potato and water. To add even more flavor, you can use low sodium chicken, beef, or vegetable broth instead of the water.
Stir and cover for about 7 minutes.
Keep covered until the sweet potatoes soften. I didn’t find this to be necessary, but just in case, to keep the meat from getting dry, you can add water/broth a little bit at a time. You don’t want them to get mushy!
Remove the lid, and season with salt and pepper if desired. I only use pepper to reduce the amount of sodium in the dish.
Optional: The next step is to add cheese which adds enough sodium to the dish for my taste. However, mozzarella is lower in sodium (and calories) than most cheeses. Another bonus point for this dish!
Serve, garnished with cilantro (if desired). It’s perfect as is, but I made mine as a topping for brown rice. It’s basically a healthy burrito bowl! Delicious.
