My plan was to make Bee’s Sugar Cookies, but when I started baking, I realized I didn’t have any shortening. I also left my baking to the day before the get-together that I needed the cookies for (oops!). To save time, I wanted a recipe that didn’t include having to chill the dough.
I found a delicious recipe from Add A Pinch that was perfect for what I needed.
The dough doesn’t need time to chill, and it doesn’t have to be rolled. Simply spoon the dough onto the baking sheet, flatten it slightly, and bake.
I doubled the recipe (this recipe makes 36 cookies) since it was for an event.
I am so glad I have a Kitchenaid mixer in times like these. Since I doubled the recipe, that was about 4½ cups of flour. It would definitely be a workout for your arm without the help of a mixer.

Soft and Delicious Sugar Cookies
Ingredients
1 cup butter, softened
1½ cups sugar
1 egg
2¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla
¼ cup extra sugar (keep to the side)
Instructions
Preheat oven to 350º F. Line cookie sheets with parchment paper,
Cream together butter and the 1½ cups sugar until fluffy. Add egg and mix until well-combined.
Stir in flour, baking powder, salt, and vanilla.
Scoop cookie dough with a tablespoon and roll it into a ball.
Using the sugar you put to the side, roll the cookie dough in it to cover each ball.
Place cookie dough onto a baking sheet, leaving enough space for the cookies to spread slightly. Lightly press each cookie down with the palm of your hand. You can add some sprinkles if you desire to make them look more festive!
Bake for 8-15 minutes or until lightly browned. Baking times may vary depending on your oven and the thickness of your cookies. Just keep an eye on them! Sugar cookies can burn easily due to all of that yummy butter!
