Healthy, delicious, and a slow cooker meal to boot! This Slow Cooker Quinoa Curry Recipe is a great meal option for any day of the week. I mean, what better place than Simply Quinoa to get some quinoa recipe inspiration?
I have added quinoa into salads before, but a quinoa curry is new to my recipe repertoire. Quinoa is a complete protein (it provides all 9 essential amino acids), making it an incredibly healthy addition to our diets. I chose to use GoGo Quinoa’s Tri-color blend as it adds even more color to the dish. As for the other healthy ingredients, in just a few slices, chops, and pours, they’re ready to go!
Slow Cooker Quinoa Curry Recipe
Ingredients
1-3 Medium Sweet Potato (about 3 cups), peeled and chopped
1 Large Broccoli Crown (about 2 cups), cut into florets
19 oz can Six Bean Blend, drained and rinsed
1/2 White Onion (about 1 cup), diced
28 oz can Diced Tomatoes
2-14.5 oz cans Coconut Milk
1/4 cup Tri-Color Quinoa
2 Garlic Cloves, minced
1 Tbsp Fresh Ginger, grated
1 Tbsp Fresh Turmeric, grated (or 1 tsp ground)
2 tsps Tamari Sauce
1 tsp Miso or additional Tamari
1/2-1 tsp Chili Flakes, optional
Instructions
Add all of the ingredients into a slow cooker. Stir until everything is fully incorporated.
Turn the slow cooker to high and cook for 3 – 4 hours until sweet potato cooks through and the curry has thickened. It can be left untouched for the full amount of cook time. However, I would check it every so often, and give it a good stir. This will ensure that everything is cooking evenly.
It is quite filling as is but serving it on top of rice is an option if you wish to make it an even more substantial meal.
