I’ve been working more than I’ve been cooking lately. This is far from a bad thing, but I’m also realizing quite a few things about myself. Not every realization is ground-breaking, but all of them are motiving (in one way or another). A few of the things that have remained untouched throughout surviving a “mid-life crisis” other than the obvious love for my family and friends, is my love of cooking.
I am also falling back in love with exercising and taking care of myself, which will forever be a work in process. This is changing the way I am eating (mostly) and I’m trying to experiment a bit more with flavors. I love pork tenderloin, and I’ve been in a huge citrus phase lately. Hence, why I am now sharing a honey lime pork recipe. This is so delicious. Thanks to Skinny Ms. for the amazing recipe!
Slow Cooker Honey Lime Pork
Ingredients
1/3 cup low sodium soy sauce
1/4 cup honey
1 lime juice only
2 garlic cloves minced
fresh ginger one-inch piece, grated
2 tablespoons avocado oil
2lb pork tenderloin
salt and pepper to taste
1 tablespoon cornstarch
Instructions
In a small bowl, mix the soy sauce, honey, lime juice, garlic, and ginger. Set aside.
Heat the avocado oil in a large pan over medium-high heat. Season the pork very lightly with salt and pepper. Sear on both sides for 4-5 minutes or until golden brown.
Place the pork in the slow cooker, and pour the sauce over it. Cook for 3-4 hours on high or 4-6 hours on low.
After the pork is done cooking, remove it from the pot. Slowly stir the cornstarch into the sauce in the slow cooker and turn the slow cooker to high. Allow the sauce to simmer until it thickens. Then pour it over the pork.
Serve with rice, vegetables, and/or a salad.
