This slow cooker chicken & sweet potatoes recipe was perfect for today. It’s a hot, hot, hot, end of the week here in Montreal! With a high of 31°F today, there was no way I was going to be turning on my oven.
Inspired by a recipe from SkinnyMs., I had all the ingredients peeled, chopped and ready to go within 15 minutes. Simply throw all of the ingredients together, and let your slow cooker do most of the work (4-6 hours). There’s nothing like a delicious meal that involves zero time spent over the hot stove.
It’s a great food prep meal to make for the weekend, or for the week ahead. Use leftovers for wraps, on top of rice, or an addition to soup. Not only do you get a delicious supper, you’ll also have a couple of your meals for the week planned and ready to go!
Slow Cooker Chicken and Sweet Potatoes
Ingredients
4 boneless and skinless chicken breasts
8 ounces cremini mushrooms, halved
2 cups sweet potatoes, peeled (if desired), and diced
1/4 cup lemon juice fresh
1/2 cup water (you can also use low-sodium chicken or vegetable broth)
1 teaspoon each dried oregano, parsley, black pepper, onion powder, salt, basil
2 garlic cloves minced
Instructions
Place the chicken in middle of the slow cooker. Then, put the sweet potatoes and mushrooms in. You can place them neatly into their own sections. Or, you can just dump everything together to let everything fall where they may.
In another bowl, whisk the remaining ingredients together.
When it comes to the spices and herbs, you can remove the ones you dislike, and replace them with herbs that you do like! I believe every recipe is an opportunity to be creative and to test what you do and do not like. By experimenting with spices, you may come up with the perfect seasoning for other dishes. Cooking should be fun!
Pour this over the chicken, potatoes and mushrooms. Make sure everything is covered well.
Cover and cook for 4 to 6 hours on Low. Or, 3 to 4 hours on High.
Once done, eat as is, or put on top of rice. To have as many nutrients as possible, it’s recommended to use brown rice- but again, that’s up to you!
You can even add this to a soup base, or into tortillas for a wrap. Simply shred the chicken first! The options are quite endless.
