With the upcoming Thanksgiving Holiday, comes the time for a new recipe! When I asked what I could contribute to Thanksgiving dinner this year, there was a simple request for a carrot dish. Taking into consideration the fact that many kids (apart from babies) do not enjoy the texture of mashed foods, I put together this simple roasted carrots recipe.
You can add other seasonings and flavors (garlic, orange juice etc.) as you see fit, but if you want to keep it very simple a bit of pepper is all you need. I had looked at quite a few carrot recipes on the Food Network, but sometimes, just throwing simple ingredients together works just as well.
Simple Roasted Carrots
Ingredients
2lb Carrots (About 15), peeled and quartered
Approx. 3 Tbsps Extra Virgin Olive Oil (or Butter)
Black Pepper, freshly ground
Fresh Parsley, chopped for garnish
Grated Parmesan, sprinkled
Optional: Garlic, minced
Instructions
Preheat oven to 425˚F.
Start by washing and scrubbing the carrots clean. I peel the skin off, but it’s your choice whether or no to do this. Cut them into halves, thirds, or quarters, depending on their size, and place them in a large bowl.
Melt 4 Tbsps of butter in the microwave. Then, whisk in the Italian seasoning, salt, pepper, and garlic if using.
Pour the butter mixture over the carrots and use your clean hands to toss them until they’re well coated.
Sprinkle in some grated parmesan cheese and give everything another toss to mix it all together. Transfer the carrots to a baking sheet.
Roast them for 20 to 25 minutes or until they’re cooked to your liking.
