Who doesn’t love a good chili? While many save chili for Superbowl Sunday, I tend to crave it as soon as the wet and chilly weather hits. This year, I wanted to alter my chili recipe in order to make it a tad healthier. I thought about the basic ingredients of chili and contemplated how to make the recipe a bit lighter.
I had planned on simply making chicken chili, and then I stumbled upon this recipe from A Spicy Perspective. As soon as I saw the roasted red pepper being featured, I knew I had to give it a try. If you want to swap out the chicken and broth for tofu and vegetable broth, you can do that too!
Roasted Red Pepper and Chicken Chili
2 pounds boneless skinless chicken breast or tenders
1 large onion peeled and chopped
1 large red bell pepper seeded and chopped
4 cloves garlic minced
1 cup chopped celery
2 tablespoons olive oil
24 ounces jarred roasted red peppers in juices
30 ounces red kidney beans drained
3 tablespoons chili powder
1 1/2 tablespoons ground cumin
2 1/2 teaspoons sea salt
2 cups chicken broth
Instructions
Preheat a large skillet over medium heat. Add the oil, chopped onions, peppers, celery, and garlic. Sauté for 3-5 minutes until softened.
Pour the sautéed veggies and the drained kidney beans into a large slow cooker. Place the chicken over the top, then sprinkle the chili powder, cumin, and salt.
Pour the jarred roasted red peppers and their juices into a blender. Puree until very smooth. Pour the pureed red pepper and chicken broth into the slow cooker. Cover and turn on low for 6-8 hours. You can speed the process up by cooking it on high for 3-4 hours, too. It’s up to you and your time constraints.
After this time has passed, remove the chicken with tongs and make sure it is cooked through. If it is fully cooked, you can then shred the chicken with a fork. Stir the shredded chicken back into the crockpot. Serve warm, with the toppings of your choice. For example, I love avocado and Mexican dishes are the perfect dishes to pair it with 99% of the time.
