Rice with Caramelized Onions Recipe
I was in the mood for something fast and easy to make for lunch and while this would be a great side dish for chicken or fish, it’s a great snack by itself.
Ingredients
1 onion, thinly sliced
2 tablespoons butter
1 tablespoon brown sugar
2 garlic cloves, minced
2 cups rice
Soy Sauce
Crushed Red Pepper Flakes
Directions
Melt butter in skillet and once it has melted, add your brown sugar. Stir well. Add the onions and sauté them until they are soft and lightly browned. Add garlic, sauté 1 minute.
Cook your rice as instructed (depends on your preferences, and of course, what type of rice you use.) You can use water, or you can use vegetable or chicken broth (2 cups of rice and 3 cups of broth, but you can use 2 cups of rice and 4 of broth- depends on the texture you want).
Pour the onion mixture on top of the rice, stir well and let it sit for a few minutes.
While that tastes fine, I found it tasted 100 times better when I added soy sauce since it cuts the sweetness from the brown sugar. Add your desired amount of soy sauce and if you want some extra heat, add some crushed red pepper flakes. Season with Salt and Pepper.
This recipe is really flexible- you can add beans, corn, chicken pieces…. a variety of things to make it a bit more exciting. It’s really up to you.
