Mushroom Shrimp Pasta Recipe
Inspired by a recipe found on Julia’s Alum, this Mushroom Shrimp Pasta is definitely going to be a family favorite.
It takes about 30 minutes to make, and is worth every second. Pair it with a hearty mixed green salad and tomatoes, and it is the perfect balance for those trying to eat a bit healthier.

Mushroom Shrimp Pasta
Ingredients
2 Tbsp Olive Oil
1 Box of Catelli Smart Spaghettini (or your favorite Whole Wheat Pasta)
600-800g Shrimp, rinsed well and peeled (I LOVE Marina Del Rey Wild Caught Argentinian Shrimp*)
1/2 Tbsp Red Pepper Flakes
1 Tbsp Salt-Free Butter
227g White Mushrooms, sliced
1/2 Cup Low Sodium Chicken Broth
12 oz Four Cheese Classico (Red) Sauce
2 Garlic Cloves, diced
Grated Parmesan Cheese
1/4 Cup White Wine, if desired
Salt and Pepper to taste

Directions
Heat the olive oil over medium-high heat in a large pan. Add garlic and allow it to cook until fragrant.
Add shrimp and season them with a dash of salt, red pepper flakes, cook for about 4-6 minutes, turning once midway.
Watch them carefully as cooking time will depend on how large they are, and how many you have in the pan. The shrimp should look pink and cooked through., with no grey bits. Remove shrimp from the pan and set to the side.
At this time, begin to cook your pasta as instructed. Once done, drain, and set to the side with a bit of olive oil drizzled on it to prevent sticking.
Add the butter to the same pan and add the sliced mushrooms, seasoning them with a bit of salt and pepper. Cook the mushrooms while stirring, for about 2 minutes, until they turn a nice golden brown colour and reduce in size.
Add chicken broth, and if desired, a bit of white wine. As it simmers, add shrimp back to the pan, and reduce the heat to medium. Add the sauce, simmer for another minute or two, then remove from heat.
Add the pasta to the sauce and coat it well. Serve, and top with Parmesan cheese, if desired.
