Lately, I have been wanting to eat every colourful fruit and vegetable in sight. I don’t know if I have the Spring weather to thank, or if my body is hinting that it wants even more veggies. Either way, I’m not complaining!
The recipe I am following is from plantuniversity.ca. Their site is full of healthy recipes that I look forward to trying. As you begin to cook this mint pea soup, you also begin to feel refreshed just from the mint aroma. It is truly the most refreshing, yet comforting, meal I’ve prepared yet.
Here goes nothing… except extra pounds, that is. More about this can be read below the recipe.
Mint Pea Soup
Ingredients
2 tbsp healthy oil for medium to high heat cooking (e.g., high-oleic sunflower oil, coconut oil, avocado oil, or camelina oil)
2 medium white or yellow onions diced
4 large potatoes, diced (you can leave the peel on if desired)
3-4 sprigs fresh thyme (or 1-2 tsp dried but I encourage using fresh!)
4 cloves of garlic, minced or grated
2 litres of vegetable stock or water (Start with 1 litre and add more if needed after blending)
2-3 cups Peas, fresh or frozen
2 tbsp Soy Sauce (Miso paste is recommended, but here are a few other replacements you can use)
⅔ cups mint leaves, loosely packed
2 cups Spinach (or your favourite cooking green)
Instructions
- Cook potatoes, thyme, garlic and onion in oil over medium heat, stirring occasionally until onions are translucent.
- Add the salt and stock or water and bring to a simmer.
- When potatoes are totally cooked (about 15 minutes), add green peas and mint. You can also add other cooking greens like spinach etc but that’s up to you!
- Stir and take the soup off of the heat. If you’ve added anything that’s a bit tougher, keep it in until it’s tender.
- Season the soup with salt and/or Miso.
- Blend until smooth.

I weigh more now than I ever have before. While I know there’s nothing wrong with having meat on your bones, I know I am not the healthiest I’ve ever been.
All this to say, please wish my partner and me, luck, please! I’ll keep you updated with how things go. For now, we started with this Mint Pea Soup, and it was delicious! Let’s hope everything else we try is just as good!
