Inspired by the Food Network, comes another recipe from my quest to try pork chops in a variety of ways. Whenever pork chops are on sale, I get the urge to try a different recipe. I love pork, but I have about 5 “go-to” pork recipes and I’d like to switch it up a bit. While nothing is life-changing about the ingredients used for this Herb Garlic Pork Chops with Chickpeas, it was still enjoyable to make and it tasted great. It’s an easy recipe that only takes about 30 minutes to get on the table, prep included. Leftovers are perfect for wraps, a stir-fry, or salad.
I will admit that I wish I had seared the pork chops beforehand to give them a nice color, as baking them in the oven doesn’t tend to do the trick. I think I always hope for it to happen naturally in the oven but am I ever shocked when it doesn’t? No. Let’s face it, when you’re in the mood to be a tad lazier as you cook, the hue of the meat isn’t a priority. We all have those days and that’s okay!
Herb Garlic Pork Chops with Chickpeas
Ingredients
4 center-cut Bone-in Pork Chops (Ideally 10 oz but I use whatever is in stock)
1/4 cup Extra-Virgin Olive Oil
1 tsp Fresh Rosemary, finely chopped + 2 Sprigs
Salt and Fresh Ground Pepper
1 tsp Lemon Zest, finely grated
19oz can Chickpeas, drained and rinsed
6 Garlic Cloves, smashed
1/2 cup Roasted Red Peppers, sliced and jarred
1/3 cup Low-Sodium Chicken Broth
Fresh Parsley, chopped
Other seasonings and spices are recommended depending on your preferences; a bit of heat would taste amazing.
Directions
- Preheat the broiler. On a rimmed baking sheet, toss pork chops with 1 Tbsp olive oil, along with the chopped rosemary and grated lemon zest. Season well with salt and pepper.
- Toss the chickpeas, garlic, roasted red peppers, and rosemary sprigs with 3 Tbsps olive oil, a dash of salt, and a few grinds of pepper. Scatter these ingredients around the pork chops and pour the chicken broth over the chickpea mixture.
- Broil while being mindful to stir the chickpea mixture once. Rotate the baking sheet halfway through, until a thermometer inserted into the pork registers 145 degrees F, 10 to 12 minutes.
- Serve on top of rice of your choosing- Uncle Ben’s Smoky Southwest Style Rice is delicious paired with it. Sprinkle with parsley, if desired.
