Inspired by Cuts and Crumbles, these Herb and Zucchini Egg Bites are great for a variety of occasions. For example, when you’re in the mood to do some healthy snacking. (I love anything that makes me feel full without needing to eat several servings). Personally, I make them as breakfast bites for when I’m on the go.
They can also be served with a healthy marinara sauce, but they already have an incredible amount of flavor on their own. I plan on experimenting with this recipe to see what else can be added- spinach, carrot shavings, different shredded cheese, etc.; this just goes to show how versatile they can be. I would, however, keep in mind to not use anything that is too liquid-y. You already spend time draining the zucchini- you don’t want to add more moisture!
Herb and Zucchini Egg Bites
Ingredients
(Approximately 20 Zucchini Bites)
2 cups (about 3 medium-sized) Zucchini, grated and well-drained
2 Garlic Cloves, grated
3-4 Tbsp Fresh Chives, chopped
2 Tbsp Fresh Parsley, chopped
3 tsps Fresh Basil, chopped
3 tsps Fresh Oregano, chopped
2 Eggs
⅔ cup Panko (Or Breadcrumbs)
½ cup Asiago or Parmesan Cheese
Salt and Pepper, to taste
Instructions
Start by grating about 1 ½ medium-sized zucchinis into a clean kitchen towel. Using the towel, squeeze as much water as possible out of the zucchini. This is to prevent the bites from being soggy. Measure out about 1 cup of zucchini and add to a large mixing bowl.
Grate 1 clove of garlic and add to the bowl with the zucchini. Chop 2 tablespoons of fresh chives, 1 tablespoon of parsley, 1 teaspoon of basil, and 1 teaspoon of oregano. Add to the zucchini and garlic.
Add in 1 egg, ⅓ cup breadcrumbs, ¼ cup of the cheese of your choosing, then salt and pepper to taste. Mix well.
Preheat oven to 400 degrees and line a baking sheet with foil. Spray with cooking spray. (I use reusable cooking mats that have measurements on them).
Spoon mixture into about 1-inch balls and add to baking sheet. Cook for about 8 minutes, flip and continue for another 8-9 minutes. (Or until the zucchini balls begin to slightly brown)
Serve zucchini bites with a side of marinara sauce if desired.
