Healthy Baked Zucchini Fries Recipe
Ingredients
(Makes 40-45 fries)
2-3 Zucchini, sliced into fry shapes or you can also slice them into circles to make chips
1/4 cup Flour
1/4 tsp Salt & Pepper
1/4 tsp Garlic Powder (I also used some onion powder and Paprika)
1/2 cup Milk
1 cup Seasoned Breadcrumbs
If you want it to be a tad spicier, add Cayenne Powder
Instructions
Preheat oven to 420F.
Place a cooling rack on a baking tray, and set aside.
Rinse the zucchini. You can either peel the skin off or keep it on.
Mix the flour, spices, salt and pepper and place in one bowl. In another bowl, have the milk ready and do the same for the Breadcrumbs.
Dip each zucchini stick in the flour, then the milk, then the breadcrumbs.
Place on the rack and bake 18-19 minutes. Serve them while they are still hot and with a side of your favorite dipping sauce. My absolute favorite dip which is also perfect for sandwiches, is Sensations by Compliments Chipotle Aioli Sauce.
Health Benefits
Zucchinis contain vitamin A, magnesium, folate, potassium, copper, and phosphorus . They also has a high content of omega-3 fatty acids, zinc, niacin, and protein. Moreover, vitamin B1, vitamin B6, vitamin B2, and calcium in zucchini assure optimal health.
I made these at 3:30 AM when I couldn’t sleep. This just shows that they’re easy to make, even for a very sleepy person!
What are your favorite things to make for a late night snack.
