My partner loves sushi. While he’s always thoughtful about where we order from, I always at least suggest we order sushi since I know it is his favorite. Most recently, we had ordered from Sucré Sushi & Poke and it was delicious. I ordered a sushi bowl, which has lead me to try making this Sushi Bowl Recipe at home.
All I did, was take note of all of the ingredients that were included in their sushi bowl, and here you have it! It is easy to make, and deliciously customizable. It reminded me of just how much I love edamame and how I need to include it in other dishes. So tasty!
I only changed a couple of things; the sauce and the type of rice used. I am not a fan of mayonnaise (nor mayonnaise-based dressings). Rather than drench the other ingredients in something store-bought, I made an avocado dressing. If you’re having a lazier type of day and do not wish to make a dressing, lemon juice also does the trick. And, rather than using white rice, I used Uncle Ben’s Tomato and Roasted Garlic Brown Wild Rice pack.
This recipe is for two simple bowls, so take note of this when shopping for the ingredients. The best part, is that you can prep the ingredients in large quantities ahead of time; you’ll have everything you need to quickly make a healthy bowl.
Easy Sushi Bowl
Ingredients
1 Large Carrot, shredded
1-2 Cups Edamame
2 Small Cucumbers (Or 1 Large), diced
1-2 cups Shrimp, deveined/peeled
1/2-1 Mango, diced
Arugula, or other mixed leafy greens
2-4 cups Brown Rice, cooked
Optional: Slices of Nori, Sesame Seeds/Sushi Seed Mix, Lemon Juice
Instructions
Prepare rice according to instructions.
If shrimp need to be thawed, peeled and/or deveined, do so. You can serve them hot or cold in this dish. I usually prefer to cook them in a bit of oil/butter and seasonings to enhance the flavor. (It was a hot day in Montreal so, this time, cold was very much welcomed!)
In a bowl, layer the leafy greens and brown rice.
Add the other ingredients on top of the greens and rice; you can simply throw everything together. If you’re serving to guests, or desire to make it more aesthetically pleasing, you can place each ingredient in their own segments.
Serve the avocado dressing/dressing of your choosing on the side, and top with sesame seeds if so desired.
