Appropriately inspired by To Simply Inspire, this colorful zucchini casserole is a healthy and comforting side dish. Akin to the flavors of ratatouille, it is easy to put together and pairs well with chicken and rice, or can be served on its own. The act of assembling the dish (layering the vegetables) is extremely simple and quite soothing, in my opinion. Life is fast-paced enough; it’s important to make a point of slowing it down every once in a while- even if only for the time it takes to make a meal.
Colorful Zucchini Casserole
Ingredients
- 1 Tbsp Olive or Coconut Oil
- 1 Large Onion, sliced
- 3 Tomatoes, sliced
- 2 Yellow Squash, sliced
- 2 Zucchinis, sliced
- ¼ cup of Panko Bread Crumbs
- ¼ cup of Parmesan Cheese
- 1 tsp Thyme
- 2 Garlic Cloves
- Salt and Pepper, to taste
Instructions
Preheat oven to 375 degrees
Grease the bottom of a 13 x 9 glass baking dish with the oil of your choosing. Place the sliced onion on the bottom of the dish.
Layer the sliced zucchini, yellow squash, and tomato in three rows.
In a separate bowl, combine the panko bread crumbs, parmesan cheese, thyme, garlic, salt, and pepper to taste. Sprinkle the panko mixture over top of the veggies.
Bake for 30 minutes. If so desired, remove from the oven at the 25-minute mark and add shredded cheese on top. Allow it to cook for the remaining 5 minutes or until the cheese has fully melted.
