This Chickpea Avocado Wraps recipe is inspired by Her Highness Hungry Me and contains some of my favorite ingredients. For example, I love chickpeas. Whether they’re served in salads, added to rice dishes or soups, or even just baked in the oven with some seasonings- they’re simply delicious. In this recipe, the chickpeas are so tasty that even our cat Pippit wanted some (as seen below).

All this to say, I feel the need to include this photo of Pippit. She has been a huge part of my life for over 16 years, and it brings me much sadness to share that soon she will no longer be one of my sous-chefs.
A little while ago, we noticed that Pippit’s eye was giving her some trouble and had changed in appearance. We brought her to the vet a couple of weeks ago, and have been giving her antibiotics and eye drops ever since. She recently had a follow-up appointment. While she had gained weight (which is good), her eye was essentially “broken” and the vet thinks that it is due to cancer. With her eye being in such bad shape, a biopsy wasn’t possible. The only course of action was a surgery that would not have a 100% success rate due to Pippit’s age and her thyroid disease. We have another appointment booked, however, this time we will be discussing end of life.
To say that I am taking this hard is quite accurate.
I am not a stranger to loss, and of course, there is a difference between human loss and animal loss. However, she has been a member of my family for so long and I’m simply not ready to say goodbye to her. I wouldn’t want to prolong her pain, so we will do whatever needs to be done to save her from that– but this is harder than I imagined. We are spending as much time with her as possible until the final appointment comes.
For every recipe posted here, I have memories of Pippit being at my feet waiting (hoping) for me to drop some ingredients. Even while making and eating these chickpea avocado wraps, Pippit was being a ninja swiper and doing her best to get some chickpeas. There will definitely be a pawprint-sized space in my heart and I will miss my feline sous chef immensely. Pippit, this recipe is dedicated to you.
Chickpea Avocado Wraps
Ingredients
1 can Chickpeas, rinsed and drained
3 Garlic Cloves, minced
2 Tbsps Fresh Mint, chopped
4 Tbsps Fresh Parsley, chopped
½ tsp each Chili Powder, Pepper
1 ½ Tbsps Olive Oil
Juice of ½ a Lemon
2 Tbsps Toasted Sesame Seeds
½ Avocado
3 Small Flour Tortillas
Optional: 2 Tbsps chopped pitted olives
Instructions
Blend ½ the chickpeas with garlic, ½ of the mint and parsley, chili powder, olive oil, sesame seeds, and lemon juice.
Mash in the rest of the chickpeas. Place 1/3 of the chickpea mixture in the middle of a small or medium-sized tortilla.
Top with the rest of the mint and parsley, olives, and avocado. Wrap it like a burrito, then toast both sides on the stove to seal.
