We’ve had our first snowfall of 2016 here in Montreal! As I sit here writing this, I can look out my window and see big, fluffy snowflakes falling. When we start to get the cold and snowy weather, I always look forward to finding ways to make our home cozy and warm. A perfect way of doing this, of course, is to make comfort food meals.
I love Chicken Pot Pie so when I saw the idea for this recipe on Gimmesomeoven, I knew I had to try it.
Chicken “One Pot” Pie Soup Recipe
Ingredients
4 Tablespoons butter or olive oil
1 medium onion, peeled and diced
2 medium carrots, peeled and diced
2 celery stalks, diced
4 cloves garlic, peeled and minced
4 ounces button or baby bella mushrooms, diced
1/3 cup all-purpose or white whole wheat flour
3 cups chicken stock
2 cups milk
3 cups shredded cooked chicken
1 pound Yukon gold potatoes, diced
1 cup each frozen/canned corn, frozen/canned peas
2 tsp Italian seasoning (or Dried Thyme & Basil- whatever you have in your pantry)
Salt & Pepper to taste
Instructions
If you already have cooked chicken prepared, heat butter/olive oil in a large pot/crock pot over medium-high heat until melted/simmering. If, like me, you don’t have prepared chicken, cook the chicken in butter. Then, you can use the juices from the chicken. Remove the chicken and shred it, leaving it to the side.
Add onion, carrots, and celery to the pot with the butter mixture. Sauté for approx. 6 minutes, stirring frequently, until the onion is soft and translucent. Add the garlic and mushrooms, and sauté for an additional 2 minutes. I found that medium-high heat was too hot for this stage, so I lowered the heat to about medium/medium-low to avoid anything burning.
Stir in the flour until it is completely combined. Gradually add in the chicken stock and milk, while constantly stirring. Stir in the chicken, potatoes, corn, peas, spices, salt and pepper.
Bring the mixture to a simmer (raise the temperature if needed), stirring occasionally so that the bottom of the soup does not stick to the pan. Continue to simmer until potatoes are soft all the way through.
Season with extra salt & pepper if needed and serve immediately.
Recommended sides are crackers or a warm baguette for dipping.
