Inspired by Spend with Pennies, this Bok Choy stir-fry recipe was discovered while I searched for ways to use Bok Choy. I don’t believe I have ever cooked with it before, so it was clearly time to do so! This recipe is so good. It sounds more intimidating than it really is and it tastes even better than what you would get dining out/ordering takeout.
Of course, the closest market to us didn’t have any Bok Choy in stock once we actually wanted to get some. Isn’t that how the cookie crumbles? However, Uber Eats saved the day and we were able to order it that way (along with some goodies that aren’t in the “big box” stores). We had a promo code so to stock up on a few things, along with the fun “extras”, it basically cost nothing to have it delivered. (Always keep your eyes open for promos!)
Bok Choy Stir-Fry
Ingredients
- 1 pound Flank Steak (Or, your favorite cut of beef), thinly sliced
- ⅓ cup Cornstarch
- 2 Tbsps Low Sodium Soy Sauce
- 3 Tbsps Vegetable Oil, divided
- 1 tsp Ginger, minced
- 2 Garlic Cloves, finely minced
- 4 Green Onions, sliced with whites & greens separated
- 4 cups Bok Choy, with whites & greens separated
Sauce
- ½ cup Low-sodium Beef Broth (Can be replaced with water)
- ¼ cup Hoisin sauce
- 2 Tbsps Low Sodium Soy Sauce
- 2 tsps Cornstarch
- 1 tsp Sriracha or to taste
- 1 tsp Sesame Oil
Instructions
Combine beef, cornstarch, and soy sauce in a bowl. Do not combine just the cornstarch and soy sauce first; sprinkle both over the beef and then toss to combine. Set aside for 20 minutes while you prepare the other ingredients.
Combine all sauce ingredients in a small bowl.
Heat 1 tablespoon oil to medium-high heat in a large skillet. Add half of the beef, cooking just until browned. Do not overcook; it usually takes less than ten minutes. Remove from the skillet and set aside. Repeat with the remaining beef, adding more oil if necessary.
Reduce heat to medium and add 1 Tbsp of oil to the same pan. Add ginger, garlic, and the whites of the onions. Cook just until fragrant (approx. 1 minute). Add the whites of the bok choy and cook for 2-3 minutes.
Stir in the sauce, bok choy greens, and beef. Cook over medium until hot and bubbly.
Remove from heat and serve over rice. Garnish with green onions and sesame seeds or sushi mixed seeds if desired.
