While I love trying new and healthy recipes, sometimes I need to give in to my sweet tooth. If I don’t, I know that the next time I go shopping, I’ll come home with the food that I’m trying to avoid. So, as I always do, I turned to the internet for a “healthier distraction” recipe.
Today’s Berry (ahem, very) Yummy Protein Bites recipe is inspired by Jessica and Nellie from Butter with a Side of Bread. It is my first time using a Flourish Buttermilk mix. The scent from opening the bag alone (yum!) is enough to make you want to bake. I might add some chocolate chips next time I make them; you know… during a time when I’m not being more health-conscious.
Just a few notes before we begin,
- Use whichever milk you like. I use Silk Almond Vanilla Milk for some of my baking, including this recipe.
- Mix the batter by hand- you don’t want to over-mix them.
- If you have trouble scooping the batter, you can use an ice cream scoop. Each bite should be about 1.5 Tbsp of batter if you’re making minis.
- Just as you would with crepe batter, let this batter sit for a few minutes before baking.
“Berry” Yummy Protein Bites
(18-24 Protein Bites)
Ingredients
1 cup (Protein) Pancake Mix
2/3 cup milk of your choice
1 egg (or replacement if allergic)
1 cup fresh berries, rinsed and diced
Optional additions: Powdered sugar, Jam, and/or Maple or Chocolate Syrup
Directions
Heat oven to 350°F. Lightly grease a (mini) muffin pan.
In a medium bowl, whisk together pancake mix, milk, and egg. Don’t be concerned if it’s just a bit lumpy.
Spoon 1 heaping tablespoon into each well of the muffin pan then top with a mix of 3-4 berries.
Cook for 12-14 minutes. They should only be lightly browned.
Cool in pan for 5 minutes.
Remove from pan.
Optional: Sprinkle top with powdered sugar, jam, syrup, or chocolate sauce.
