Is there anything better than an avocado salad? To be fair, I think I ask “Is there anything better than….” after almost every meal I make.
Do you want to know what I’ve discovered since starting to eat healthier meals more consistently? That the more “good for you food” you eat, the more often you crave healthy food. This is not to say that my daily indulgence of ONE treat isn’t extremely delicious (because it is). The difference is simply instead of craving chocolate, I crave avocado or tomatoes.
This recipe is fast and delicious. Especially, the cilantro dressing. Plus, the corn satisfies any craving you have for less healthy food. It also helps you feel full, so if you don’t think an avocado salad is enough for a meal, trust me- one or two bowls of this and you’ll be set. I didn’t make it with any chicken and I was still full after one (average-sized) bowl.
Avocado Salad with Cilantro Dressing
Ingredients
2-3 Cups Fresh or Frozen Corn
1/3 Cup Vegetable Broth
2 Red, Orange or Yellow Bell Peppers, seeded and chopped
1 Red Onion, chopped
2 Cups Fresh Cilantro
1-2 Avocado(s), peeled, pitted and cut into large chunks
Sliced or Cubed Chicken, omit for vegetarian dish
Avocado and Cilantro Dressing
1 Avocado
1/3 Cup Unsweetened Almond or Soy Milk
1/2 Cup Fresh Cilantro
1-2 Tbsp. Lime Juice
Dash of Pink Himalayan Salt
Instructions
Blend all of the Cilantro Lime Dressing ingredients until smooth. Adjust Lime/Salt if needed. I have also grown to be obsessed with Avocado Oil, so you can add a bit of that in there too.
If using frozen corn, combine it with the broth in a skillet for 5 minutes.
Toss the other salad ingredients together in a bowl, add the corn, and serve with the dressing on the side.
