7 Minute Antioxidant Salad Recipe
When I scrolled past this video from SlimFast.com on my Facebook Newsfeed, I knew I had to make this 7 Minute Antioxidant Salad.
It is healthy, quick and tasty; perfect as a side dish or on its own. I love feta cheese, and the combination of the feta and grapes is delicious. Avocado, tomato and cucumber together is another one of my favorite fast salads when mixed with some chicken. This whole recipe is a medley of my favorite salads!
Ingredients & Health Facts
4-6 Servings
(Amounts are up to you and your taste preferences, but this is the amount I use)
5 Cups Spinach- Lutein: Healthy Eyes
2 Tomatoes- Lycopene: Healthy Heart
1 Cucumber- Fisetin: Healthy Brain
2 Avocados- Vitamin E: Healthy Skin
2 Cups Red Grapes- Resveratrol: Fights Cancer
1 Cup Feta Cheese- B12: Immune Boost
1/4 Walnuts- Omega-3s: Anti-Inflammatory
2 Tbsp Olive Oil- Polyphenols: Fights Cancer
2 Tbsp Vinegar- Probiotics: Better Digestion
Dash Pepper- Piperine: Absorbs Nutrients
Instructions
Slice/Chop all ingredients, mix together well in a bowl. Drizzle the Olive Oil & Vinegar on top, add pepper and mix well again.
Super easy, right?

Hello! I am so sorry for my delayed response!
I went through the recipe again, added the amounts of each ingredient I had used, and made a Nutrition Label for you. You can find it in the post now, but to answer your questions, this recipe makes about 4-6 servings, but one serving (approx 2 cups) is 372 calories.
Sorry again for taking so long to respond! We are experiencing a heat wave that has limited my use of computers for the past week!

What type of vinegar is used?
Whichever type you prefer. I had used a bit of regular white vinegar once but I really enjoy balsamic vinegar for dressings so I usually use that. 🙂
